Finca Colomba, El Salvador


Honey processed coffees are processed somewhere in between “washed” and “natural/sundried” coffees. The skin of the coffee cherry is removed but then, unlike washed coffees, the seeds (beans) are left to dry in the sun with the sweet, sticky mucilage left on them. This infuses the coffee beans with sweet, fruity flavors from the coffee fruit. They have the sweetness characteristic in natural coffees but balanced with acidity like washed coffees. When done well, like in the Finca Colomba, honey processing can yield delicious and balanced coffee.
